SATAY VEGETABLES IN FILO PASTRY

This Recipe Serves 6

Recipe Ingredients:
  • 1 packet filo pastry
  • 100g butter, melted
  • 200mL oil
  • 150g Wood’s Peanut Satay Sauce
  • 120g potatoes, peeled and diced
  • 60g sweet potato, peeled and diced
  • 1 medium onion, diced
  • 100g peas
  • 2 spring onions
  • 50mL coconut cream
Recipe Method:
In a sauce pan, heat half the oil and add the onions and sauté without colour until soft. Add the diced potatoes and the spring onions and cook until tender. Next add the Wood’s Peanut Satay Sauce and heat. Add the peas and stir to combine all the ingredients. Add the coconut cream and combine with other ingredients. Warm through and allow some to the coconut cream to be absorbed and reduced. Remove from the heat and allow to cool completely. To Assemble: Place a sheet of the filo on a flat surface and brush with a mixture of the melted butter and the remaining oil. Add a second sheet of the filo to the first and again brush with the butter mix. Finally add a third sheet of filo but leave un-brushed. Place some of the vegetable satay mixture towards one end of the filo, roll and fold to form a parcel. Once formed, place the parcel on a greased baking tray and brush with the butter oil mixture. Repeat this process until all the mixture is used. Bake in an oven set at 180°c until golden brown. Serve with some extra Wood’s Peanut Satay Sauce mixed with a little coconut cream.
