GREEN TOMATO PICKLE AND AVACADO SALSA |

Recipe Ingredients:
400g Wood’s Green Tomato Pickle
1 small Spanish onion, finely diced
1 clove of garlic, crushed
2 teaspoons castor sugar
2 avocados, semi ripe
¼ bunch coriander, picked and chopped
60mL Edlyn 100% Lemon Juice

Recipe Method: In a bowl, place the chopped Spanish onion along with the crushed garlic, the castor sugar and the Edlyn 100% Lemon Juice and mix well.
Next, add the Wood’s Green Tomato Pickle. If able, chop the avocado into small pieces in keeping with the size of the Green Tomato Pickle. Mix all the ingredients together carefully.
Place the salsa in a serving bowl and garnish the top with the chopped coriander. Serve with crackers or similar. |
