Cremolata Flavoured Pasta Sauce

Ingredients:

2 lemons, zest and juice

½ bunch parsley, washed and chopped

½ bunch basil, washed and chopped

2-3 cloves garlic, chopped

550g Wood’s Tomato Relish

Pinch of salt and pepper

1 Food processor or bar-mix

Method:

Combine the lemon zest and juice, the washed parsley and basil, and the partially crushed garlic. Then using a food processor or bar-mix, puree the mix into a smooth paste. Add the Wood’s Tomato Relish and mix to a smooth texture. Correct the flavour with the addition of some salt and pepper. Cook a selected pasta (fettuccini, penne, spirelli or similar), and then lace in a fry pan with a little olive oil and gently toss. Place the pasta in a serving bowl. Gently heat the Cremolata in the fry pan, and once warmed, pour the sauce over the pasta and top with shaved parmesan cheese.
