BBQ Butterfish
Ingredients:
1kg Butterfish
2-3 cloves Garlic, crushed
160mL olive oil
¼ bunch parsley, chopped
¼ bunch coriander, chopped
Pinch cumin, ground
Pinch cayenne pepper
½ knob ginger
2 lemons, juice and zest
Pinch sea salt and cracked black pepper
250g Wood’s Hot Apple Chutney
200mL Wood’s Lime & Chilli Mayonnaise

Method:
Portion the butterfish into a 200g fillet and set aside. In a bowl combine all the other ingredients, except the Wood’s Hot Apple Chutney and the Wood’s Lime & Chilli Mayonnaise, to make a marinade for the fish. Allow the fish to marinate for an hour or so. The marinade should be on the dry side so as to make the cooking easier, there should be no need to remove excess marinade from the fish. To cook, heat some oil in a fry pan and grill the fillets. Once cooked serve the fish on a bed of salad mix and top with the Wood’s Hot Apple Chutney and drizzle the Wood’s Lime & Chilli Mayonnaise around the dish.
