Beef salad with red radish and baby roma tomatoes (Gluten Free)

Ingredients:

10 x 120gm beef tenderloin

300gm wild rocket

300gm green beans

2 bunches red radish

2 pun baby roma tomatoes

1 red salad onion

Olive oil

Sea salt flakes

Woods tomato relish

Method:

Top and tail beans and blanch for 45 seconds in salted boiling water, remove and refresh in ice water (this stops the cooking and retains the fresh green colour), drain off water and reserve.

Wash tomatoes and cut in half length ways, wash radish and finely slice into rings, wash rocket and spin off excess water, peel and finely slice red onion into half moons, place all salad items into a mixing bowl with beans and reserve.

Cook beef tenderloin on a hot char grill for 2 minutes on either side, place in a warm place and allow to rest.

To serve, place 1 tbsp of Woods tomato relish onto a plate and lightly smear across 1 half of the plate, carve steak and place over the relish, toss a little olive oil and sea salt flakes over salad and serve to the side of the carved steak.
