Baked Goats Cheese Tartlets

Ingredients:

20 mini short crust tartlet cases

300g goat’s cheese

120g Wood’s Green Tomato Pickle

2 eggs

60mL light sour cream

250g Wood’s Red Capsicum Relish

¼ bunch Italian parsley chopped

Method:

Place the tartlet bases on a baking tray ready to be filled. In a bowl combine the eggs, sour cream and a little seasoning. Place a little Wood’s Green Tomato Pickle in the base of each tartlet case and top with the goat’s cheese. Carefully pour the custard mix over each tartlet. Place in a preheated oven set at 160˚c for 10-12 minutes. While the tartlets are baking, heat the Wood’s Red Capsicum Relish in a sauce pan (if desired, puree with a bar-mix). Pour the sauce on the base of your serving and top with the cooked tartlets. Garnish with chopped parsley.
