Moroccan Beef Koftas
Ingredients:
700g minced beef, lean
125g chickpea flour
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 teaspoon caraway seeds
2 cloves garlic, crushed
3 small chillies, chopped finely
850g Wood’s Tomato Relish
¼ bunch Italian flat leaf parsley

Method:
In a mixing bowl combine all the ingredients, making sure they are well incorporated together. Once blended, form the mixture into 24 even sized balls and set aside for use when required. If possible allow the koftas to stand for 1-2 hrs before use to allow the flavours to infuse completely before cooking. To cook the koftas heat a little oil in a large fry pan and heat till it begins to give off a light haze. Add half the koftas to the pan and gently move them in the pan to seal on all sides. Once sealed, reduce the heat and continue cooking until they are cooked all the way through. Repeat this process until all the koftas are cooked. While the koftas are cooking prepare the tomato sauce. In a sauce pan heat the Wood’s Tomato Relish with the chopped Italian parsley and add a little of the Edlyn 100% Lemon Juice to adjust the consistency. To serve the koftas, cook some couscous and place it on a serving plate. Place the koftas in the heated tomato sauce and gently toss. Arrange the koftas on top of the couscous and garnish with any remaining chopped parsley or some chopped coriander.
