Cumberland Sauce

Ingredients:

1kg Wood’s Cranberry Sauce

300mL port wine

1 medium onion, finely chopped

1 lemon, juice and zest

2 oranges, juice and zest

1 small knob of ginger

1 teaspoon dried mustard 50mL oil

Method:

In a suitable size sauce pan, heat the oil and gently sauté the onion. Add the mustard powder and ginger and cook till the mustard begins to give off a strong aroma. Deglaze with the port wine and bring to the boil. Add the Wood’s Cranberry Sauce and the orange and lemon juice and zest. Bring the mixture to the boil and then simmer for 10-15 minutes to allow the sauce to thicken slightly. Strain the sauce into a clean sauce pan and reduce to the required consistency. Allow to cool completely and serve as required. This sauce is ideal with game dishes or pork pies.
